It feels somewhat appropriate that one of my first posts on my brand new blog would be a recipe for one of my favorite ways to make the people in my life happy. Yes, I still develop recipes. I just like a good boxed cake mix cookie once in a while. I still prefer cakes from scratch. Tonight, while I hemmed and hawed over what to put in my shiny new sidebars, I paused to procrastinate and make cookies. This is my avoidance behaviour. I don’t ever expect to outgrow it. So, let’s enjoy the cookies and carry on with grins on our faces from the delicious flavors.
Here's how to make cookies from your favorite cake mix.
- 1 box Cake Mix
- 2 Eggs
- 1/2 cup Canola Oil (or other flavorless cooking oil)
Mix all ingredients together
Drop by the tablespoon-full onto an ungreased cookie sheet
Bake for 10-12 minutes, or until golden brown
Extra Treat: frost the flat side of one cookie, and then put the flat side of another cookie on the frosting, for a delicious sandwich cookie.
